Slow Food as a Way of Life

slow_food Pausa was originally conceived in the spirit of and according to the Slow Food Movement, which subsequently led us to establish the nonprofit organization – Slow Food Upper Galilee. The most active chapter in Israel, we aim to reinvigorate people’s interest in the food they eat, where it comes from, how it tastes, and how food choices affect the rest of the world. Like other clusters the world over, we affirm the following:

  • Everyone has a fundamental right to pleasure and, thus, the responsibility to protect the traditions and cultures that make this pleasure possible. The Slow Food movement is founded upon the recognition of the strong connections between plate and planet.
  • Slow Food is good, clean and fair food. We believe that the food we eat should taste good; that it should be produced in a clean way that does not harm the environment, animal welfare, or our health; and that food producers should receive fair compensation for their work.
  • As you walk our grounds, you will notice Pausa’s clearly labeled trash bins for separate disposal of plastic, paper and glass, which are then recycled locally. Moreover, Pausa’s chef composts his organic garbage and then reintroduces it back into nature in our own garden. This practice is closely related to our strong ties to the Slow Food Movement

Pausa is a gourmet inn which offers both warm hospitality and fresh cuisine in the slow food tradition. Whenever possible, our food comes from our own garden or from those of our neighbors. It is best eaten at leisure and in the company of friends.

  Slow food's Principles How they are expressed through Pausa?
pict The food should be in good quality & fresh So the aim is a minimum time between harvesting, cooking and eating. We insist on high quality selection of products that are supplied to us by others as well.
pict Eat fruits and vegetables in season The menu changes with the seasons
pict Desirable to use the product to the end After peeling the lemons to make Lemoncello, we use the inside of the fruit for making sauce for different dishes Avigdor is making up.
pict Using local products The olive oil we use comes from organic farmer living in our community. Even our soaps, waiting for you in the rooms, are made from water taken from the Banias and herbs and medicinal plants that grow along the river, not to mention the wines…
pict Meal as a Social Event Meals in Pausa are served around one large table, all guests dining with us – slowly: eating, drinking, and talking.
pict Food production should be one that does not pollute the environment or harms Pausa's vegetable garden is enriched with compost that we produce ourselves from organic food leftovers from Pausa's kitchen.
pict Food producers should receive compensation for their labor This is the plan – we pay our manufacturers and you pay us 
pict According to Slow Food organization, when you eat the food, you become partner in the knowledge of the production process and therefore you support the manufacturers. So now you know and we are partners, right?
